BAKED COD LYING
Preparation time: 45 minutes.

Ingredients:
Four servings of salted cod loin.
Three potatoes.
A medium sweet onion.
Three tomatoes.
Olive oil.
Dry white wine.
salt
Black Pepper.
Mayonnaise
Step 1.-We prepare the oven and put it to preheat to 180 degrees, just below and during the preparation of the ingredients.
Step 2.-Peel and cut the potatoes into slices, a bit plump, you do the same with the onion and tomatoes.
Step 3.-In a roasting tin up of having the lateral a little high, place the potatoes in the center as making a bed, threw salt and a little oil on each potato slice.
Step 4.-Put the onion slices over the potatoes, and add salt and a drizzle of olive oil on each slice (not to much)
Step 5. Then put the tomato slices over the onions and add salt to taste and a little oil on each slice.
Step 6. Add the white wine, just a little to cover the potato to avoid burning. We introduce the roasting tin up in the oven with the hot just below for 30 minutes, after this, we find that the potato is almost cooked.
Step 7.- incorporate cod over the tomato after add a little oil to each of the loins and leave 5 minutes we adding another splash of wine over the cod. After five minutes check that the cod have that characteristic white color without letting it dry and take out the tray from the oven.
Step 8.- Once outside we cover each loin with a little mayonnaise and put browning over high heat until browned the mayonnaise and is ready. ...
